Herring with Spinach and Pinenuts |
| 450g (1lb) | Herring fillets | |
| 15-20ml (1-2 tablespoons) | Oil | |
| 1 | Small onion, chopped | |
| 50g (2oz) | Frozen spinach, slightly thawed | |
| 50g (2oz) | Fresh breadcrumbs | |
| 25g (1oz) | Parmesan cheese | |
| 15g (1ž2oz) | Salt & pepper | |
| 25g (1oz) | Pinenuts, lightly chopped |
| Heat Oven to 220oC/425oC, Gas Mark 7 | |

Heat the oil in a pan, add the onion and cook for 2-3 minutes. |

Add the spinach, breadcrumbs and cheese. Cook for 1 minute & set aside. |
| 3 | Place each fillet onto a chopping board skinned side down and season with salt & pepper. |
| 4 | Spoon the stuffing over each fillet, roll up and secure with a cocktail stick, if necessary. |
| 5 | Bake for 10-15 minutes, garnish with pinenuts and serve with a green salad and ciabatta or pitta bread. |
