  Dish: Mauritius Banana Cake

  butter melted                
  Oil tablespoons 3   3        
  Sugar     300   300      
  Ripe Bananas   8   8        
  Eggs   3   3        
  rum ml   50   50      
  dry active yeast g   7   7      
  1 Heat Oven to Gas 7 425F 220C  
  2 Caramlise 3 tablesppons of sugar with 1 tablespoon of water over a low heat  
  3 Pour the caramel into a cake tin  
  4 Cut the bananas length ways and place on caramel  
  5 Beat eggs and sugar until the mixture is very light and creamy. Stir in butter and oil the add the flour and yeast a little at a time.  
  6 Stir in the rum then pour the cake batter on top of the bananas  
  7 Bake for 40 minutes  
  8 Check with a skewer it should come out clean when done  
  9 Unmould immediately
