|Korma Gosht (mild)|
About 2 tblspn of oil
1 Onion, peeled, and sliced
2 Bay leaves
1 inch stick of cinnamon; 8 peppercorns; 8-10 cloves; 4 small cardamoms - 2 large cardamoms.
450 gms. Cubed Lamb.
4-5 cloves crushed garlic; 15 gms fresh ginger (peeled/crushed), or 1 tsp ground ginger.
25-50 gms ground almonds; 1 tsp ground chilli; _ tsp turmeric; 1_ tsp ground cumin;
1_ tsp ground coriander; pinch salt.
Under _a pint plain natural yoghurt
Nearly 300ml water
10 gms creamed coconut.
Heat the oil in a large pan and fry the onion until light brown. Add the bay leaves, cinnamon, peppercorns, cloves, small & large cardamoms, and continue frying for 30 seconds.
Add the cubed meat and stir in the garlic, ginger, ground almonds, chilli, turmeric, cumin, coriander, and salt.
Fry for about 7 mins. until the meat is fairly dry and the oil separates.
Stir in the yogurtyoghurt and gently fry to remove moisture.
Add water and cover for 40-45 mins.
Stir in coconut 5 mins. Before the end.
