  1. Heat the oil (1 tbsp) in a large pan, add the onion (1 onion) and cook gently for 5 minutes, until softened.

  2. Stir in the ground coriander (1 tsp) and the chopped coriander stalks (a little) and cook for 1 minute, until fragrant.

Chef’s notes

  • Coriander stalks have more flavour than the leaves, so cook them with the spice and keep the leaves for the end.
  • For a richer soup add a spoonful of crème fraîche or yoghurt to each bowl.
  • Old, woody carrots make a dull soup; use firm, sweet ones and cook them until really soft.

How this recipe was developed

We compared the carrot and coriander soup on BBC Good Food, its soup-maker version, and BBC Good Food’s carrot soup with chilli coriander pesto.

  • Ground and fresh coriander. BBC Good Food’s version (4.65/5 from 769 ratings) uses 1 tsp ground coriander and a handful of fresh; we cook the fresh stalks with the spice too.
  • A potato for body. BBC Good Food adds a potato so no cream is needed; we kept it.
  • A squeeze of lemon. We added optional lemon juice to lift the sweetness of the carrots.
