Broccoli and Stilton Soup

A thick green soup of broccoli simmered with sweated onion, leek, celery and a little potato for body, blended smooth and finished off the heat with crumbled Stilton so it melts in without turning grainy.

  • Serves 4
  • Hands-on 15 min
  • Cook 30 min
  • Freezes well (before the Stilton)
  • Good for leftover Christmas Stilton
  • British

Method

  1. Heat the oil (1 tbsp) and butter (15 g) in a large pan. Add the onion (1 onion), celery (1) and leek (1 leek) with a pinch of salt and cook gently for 8–10 minutes, until soft but not brown.

  2. Add the potato (1 potato) and stock (1 litre), bring to the boil and simmer for 10 minutes, until the potato is nearly tender.

  3. Add the broccoli (500 g) and simmer for 5–8 minutes more, just until tender and still bright green. Overcooked broccoli turns the soup grey and sulphurous.

  4. Take the pan off the heat and blend until smooth with a stick blender, or in batches in a blender.

  5. Leave the soup to stop bubbling, then stir in the Stilton (140 g) until melted. Season with black pepper (it rarely needs salt) and reheat gently without boiling. Serve with a little more Stilton crumbled on top.

Chef’s notes

  • Boiling the soup after the cheese goes in can make it grainy, so keep it below a simmer once the Stilton is added.
  • Any blue cheese works: Shropshire Blue, Gorgonzola or Roquefort. Stilton rind is fine to use.
  • To freeze, cool and freeze before adding the cheese; add it when you reheat.

How this recipe was developed

We compared BBC Good Food’s broccoli and Stilton soup, its soup-maker version and the version on Allrecipes.

  • A soffritto of three. BBC Good Food (4.8/5 from 583 ratings) sweats onion, celery and leek in oil and butter; we do the same.
  • Potato for body. Both BBC Good Food and Allrecipes add potato so the soup needs no cream; we use one medium potato.
  • Broccoli last. We add the broccoli after the potato has had a head start so it stays green.
  • Cheese off the heat. BBC Good Food stirs the Stilton in at the end; we take the pan off the heat first so it does not split.
